Just the class story (no side missions) is like 30-60 minutes per planet and there are like 10-12 planets (don’t remember exactly). Depending on how much free time you have, it will be a few days to a few weeks.
Is the Jedi Knight story good SWTOR?
Overall, I would compare the JK story as being sort of what you’d expect from a KOTOR 3 type story. It’s got quite a bit of action and makes you feel like you’re the super hero of the galaxy. If that’s what you’re looking for, then I would highly recommend at least trying it.

Can you skip Iokath?
Take the Fractured Alliances one. But it didn’t skip KOTFE i or of KOTET it just added the Iokath missions. If you want to skip Iokath pick the Jedi Under Siege mission instead. That has worked on my other characters.
Should I skip Hutt Cartel?
It’s pretty much optional content. You can skip it if you want to. You won’t miss out on any items of note. You will miss some story but the story you miss is not directly tied to the current chapters.
